Korean Beef Bowl

Servings: 4


INGREDIENTS

  • 1000 g (2.2 lbs) lean ground beef
  • 26 g (2 tbsp) garlic - grated
  • 34 g (2 tbsp) ginger - grated
  • 2 tsp toasted sesame oil
  • 2 tbsp sweetener - granulated
  • 2 tbsp gluten free tamari or coconut aminos
  • 1/2 tsp red pepper flakes
  • 4 tbsp green onions - chopped, divided
  • Garnish: 6 g (1 tbsp) sesame seeds - dry roasted
  • SIDE DISH: included in second macro chart
  • 5 minute Ginger Cauliflower Rice Stir Fry - divided

DIRECTIONS

  • Cauliflower Rice
  • 1.   Prepare the 5-minute Ginger Cauliflower Rice Stir Fry as per the recipe. When done, cover the pot to keep warm

  • Beef Stir Fry
  • 2.   Place a wok or skillet over medium heat. Place and distribute half of the ground beef into the pan and stir fry until done, about 5 to 6 minutes. Transfer to a bowl and repeat with the second batch of ground beef. When the second batch of ground beef is cooked through, return the first batch and toss to combine.

  • 3.   Sprinkle the grated garlic, ginger, sweetener, red pepper flakes and sesame oil on top of the meat. Toss as you cook for 2 minutes. Drizzle in the sugar free tamari, toss and cook for 5 minutes to allow the beef to absorbs some sauce. Remove from heat

  • 4.   To plate, first put the cauliflower rice into the bowl, then place one serving of the stir-fried beef on top. Garnish with a sprinkle of the sesame seeds and green onions over the beef. Serve while hot. Enjoy!
