The inspiration and methodology for this amazing keto dessert came from Ann Reardon of How to Cook That. My keto version is completely keto, grain free, gluten free and sugar free. My cheesecake uses some of my previous recipes, such as the Keto Sugar Cookie, and the Raspberry Jelly recipes. I replace high sugar and carb watermelon with strawberries, to create a wonderful taste combination that I am sure will be a happy surprise for everyone. A link Ann Reardon’s dessert in given in the FYI section, and links to the Sugar Cookie and Raspberry Jelly recipe are in the Ingredients section.
