Candy Corn Fudge

Servings: 64 of 21g each


INGREDIENTS

  • 3 full batches of my Sugar Free Sweetened Condensed Milk or my Dairy Free Sweetened Condensed Milk
  • Per individual batch
  • 2 cups (473 ml) heavy whipping cream
  • 120 g (1 ¾ cups) sweetener – ground to fine confectionery powder
  • 36 g (1/2 cup) unsalted butter
  • 2 tsp (10 ml) vanilla
  • 100 g (1 ¼ cups) sugar free white chocolate – baking bars chopped or chips (first version)
  • OR 100 g (1 ¼ cups) of my Keto White Chocolate for version 2
  • One of these gel colors per layer
  • Yellow gel color
  • Orange gel color

DIRECTIONS

  • 1.   Prepare an 8inx8in or 20cmX20 cm cake pan with parchment paper if you want to make squares or use a 6inX6in or 15cm X15 cm cake pan if you want to make the individual candy corn fudge pieces

  • 2.   Make my sugar free sweetened condensed milk or dairy free sweetened condensed milk NOTE: you can make all three batches of sweetened condensed milk at one time, but I prefer to make the 3 individual batches

  • 3.   Into a large saucepan, add the heavy whipping cream, confectionery sweetener, and unsalted butter. Stir as you cook over medium low heat until thickened, about 20 minutes

  • 4.   Remove from heat and immediately drop in the chopped sugar free white chocolate. Stir until the chocolate has melted and become homogeneous with the sweetened condensed milk. For the first layer, add the yellow gel food color. Stir until the fudge mixture is evenly yellow. Add the gel food color until you have the intensity you like. Pour into the prepared pan of your choice. Refrigerate for 30 minutes to allow the yellow layer to solidify
