1. Prepare 2 full disks of carnivore waffles to lightly crispy stage. Cool to room temperature
2. Pour the heavy whipping cream into a bowl and whip to light stiff stage
3. To the same bowl, add the ricotta, OPTIONAL sweetener, vanilla and gelatin. Whip to stiff peak stage
4. Place one of the disks on a serving platter and transfer all the cheesecake mixture on top. Spread out evenly within the disk perimeter
5. KETOVORE/KETO version only: place the sliced strawberries over the entire surface of the cheesecake
6. Place the second waffle disk on top of the cheesecake layer. If desired dust with sweetener. Chill in the refrigerator for 1 hour to set. Serve and enjoy!
