Keto Scotch Eggs

Traditional Scotch eggs are a favorite breakfast or picnic food. These keto, paleo, gluten free Scotch eggs start with a boiled egg done just the way you like, either soft and runny yokes, medium or hard boiled, then surrounded with a delicious seasoned pork sausage. I use a mild Italian sausage but you can use a farmer’s sausage or even spice things up with a chorizo sausage. This video shows both the oven baked Scotch egg method or the standard frying method. These tasty Scotch eggs are great for a prep ahead breakfast, on the go, or for brunch. They also make a great entree with a side such as my ABC Soup, Jicama Thai Green salad or Roasted Parmesan and Lemon Broccoli.

Scottish Shortbread Cookies

There is nothing better than a melt in your mouth, buttery rich shortbread cookie, except if that cookie is also keto, sugar free, grain free and thus gluten free. These traditional Scottish shortbread cookies have a rich buttery taste, are tender, yet also crispy. These cookies are easy to make, and are a great treat for any day, or to celebrate special occasions, like the Scottish celebration of Robbie Burns Day, Christmas, Valentine’s Day or Easter. Make them in a traditional flan pan or use a cookie cut out to make your favorite shapes.

Keto Vegan Lime Cheesecake

This tasty vegan keto cheesecake is sugar free, gluten free. The entire dessert, the cheesecake and the pie crust, are very easy to make. The cashews make an incredibly creamy and silky, but light tasting, substitute for dairy cream cheese. The cashews cream cheese is further enhanced with the fresh lime juice, while the pie crust incorporates cocoa, coconut cream, and nut flours, and either the hemp protein powder or pea protein powder, to create a rich satisfying taste that does not overpower the fresh flavor of the cheesecake filling. These Cajun sole tacos are a flavorful twist on the classic Mexican fish taco. Served on a grain free, gluten free soft tortilla, the Cajun seasoned grilled sole complements the red cabbage coleslaw salad with the fresh lime vinaigrette. Toppings can include a dollop of sour cream and an additional sprinkle of fresh lime. You could use a hard shell taco in place of the tortilla for a crunchy version, and the sole can be substituted with either cod or tilapia fillets. A tasty red cabbage coleslaw salad that can be served steamed or raw with a lime and apple cider vinaigrette. This salad is an excellent side for main dishes. It keeps well for several days, if stored in an airtight container in the refrigerator.

This sugar free icing is a great alternative for those following a keto, sugar free, gluten free diet or for diabetics.
