Korean Strawberry Milk

INGREDIENTS

  • 26 g (approx 1 oz) fresh ripe strawberries – cut into small cubes
  • 10 g (2 tsp) Strawberry Reduction Jam (see note below for substitute)
  • 240 g (1 cup) unsweetened plain or vanilla almond milk, or nut milk of your choice - chilled
  • 60 g (¼ cup) full fat coconut cream – cooled – well stirred
  • 5 g (1 small scoop) – MCT Powder, or sub with MCT oil
  • OPTIONAL: 4 g (1 tsp) sweetener and 1 strawberry for garnish (not included in macro calculation)

DIRECTIONS

  • 1.   For best results, chill your almond milk and coconut cream. If the liquids are not cold enough, add a couple of cubes of ice to a tall glass

  • 2.   Drop in the ripe strawberries, which are cut into even small cubes. Add the Strawberry Reduction Jam or substitute (see FYI). Pour in the chilled almond milk

  • 3.   Into a measuring cup or small container with the chilled coconut cream, add the MCT powder or MCT oil. If using the powder, stir until the powder is completely dissolved into the cream. Pour into the glass. Stir gently to combine all the ingredients, especially the reduction jam. Taste for sweetness. OPTIONAL: Add 1 tsp of sweetener if desired

  • 4.   OPTIONAL: Garnish by placing a cut strawberry onto the side of the glass

This beverage is best when served very cold. Also, to get the true strawberry flavor, make sure you only use ripe strawberries.

If you do not have strawberry reduction jam, substitute by using an additional 26 g (approx. 1 oz) of ripe cube strawberries, add 1 tsp of granulated sweetener, mash together and let sit for a few minutes in order that the strawberries absorb the sweetener. Add to glass in place of jam.

This is a very satiating beverage that is both refreshing and, by using the MCT powder or oil, you have made a bulletproof breakfast smoothie – which is a tasty occasional substitute for your breakfast or when you need a quick breakfast to go.

Make an extra glass and cover with cling wrap for the next day. The taste will develop overnight and will keep in the refrigerator for a couple of days. Enjoy!
