Lemon Vinaigrette

Servings: 6


INGREDIENTS

  • 100 g (½ cup) olive oil
  • 80 g (1/3 cup) freshly squeezed lemon juice
  • 10 g (2 tsp) garlic – minced
  • 10 g (2 tsp) smooth Dijon mustard
  • 1 tsp dry thyme
  • 1 tsp dry basil
  • 3 g (½ tsp) salt – ground fine
  • ½ tsp ground black pepper

DIRECTIONS

  • 1.   Into a small mixing bowl add all of the ingredients: the olive oil, lemon juice, garlic, Dijon mustard, thyme, basil, salt and pepper. Whisk very well until mixture looks creamy. Transfer to a sealable jar

  • 2.   The lemon vinaigrette will keep well for 1 to 2 weeks if stored in a glass, airtight container in your refrigerator
