Sugar Free Creamy Milk Chocolate Fudge

Servings: 18


INGREDIENTS

  • To make 240 g (1 cup) Sugar Free Sweetened Condensed Milk
  • 480 g (2 cups) heavy whipping cream
  • 120 g (10 tbsp)   Lakanto sweetener  – ground to confectionery
  • 36 g (2 tbsp) unsalted butter
  • 10 g (2 tsp)   pure vanilla extract  
  • To make 100 g of Chocolate Truffles (the following makes a full batch - but you only need 100 g of the finished chocolate sauce)
  • 30 g (2 tbsp) MCT oil, coconut oil (unflavoured) or melted unsalted butter
  • 30 g (2 tbsp) unsalted butter
  • 90 g (6 tbsp) whipping cream
  • 9 g (2 tsp)   pure vanilla extract  
  • 22 g (4 tbsp) pure cocoa powder or pure unsweetened cocoa (solid)
  • 1 g (1 tsp) instant unflavored coffee
  • 50 g (4 tbsp) Lakanto sweetener (or other, adjust to taste) – ground to confectionery powder

DIRECTIONS

  • 1.   For the Sugar Free Sweetened Condensed Milk, go to Sugar Free Sweetened Condensed Milk. Prepare the batch as in the linked recipe.

  • 2.   For the Chocolate Truffle, go to Chocolate Truffles. You will use 100 grams from the batch for this fudge recipe.

  • 3.   Pour 100 grams of the liquid Truffle mixture into the bowl with the Sweetened Condensed milk. Use a spatula to combine the ingredients. Mix until both ingredients are combined well into one homogeneous mixture. Pour the fudge mixture into a parchment lined container (I used a container that was about 7 X 5 ½ in or 18 X 14 cm)

  • 4.   Refrigerate for about 1 hour. Cut into 18 pieces – 3 lengthwise rows and 6 rows along the width. Store in a sealed container in the fridge. Will keep well for up to two weeks. Enjoy!

As I explained in the video, this was a how-to instructional video which used 2 previously shown videos and their posted written recipes. For your convenience, I have included all the ingredients for the chocolate truffles, but I refer you to the written recipes in my previous posts for the detailed directions. I know some people will find this tedious, but I want to explain, and show, how learning a few good basic recipes is very useful to creating new variations. Cooking is a skills-building and a step-by-step process. Both the sweetened condensed milk and the chocolate truffle recipes have specific techniques so if you have not seen them before, please do go to the recipes and or video to see how to make them.
