White Chocolate Fudge

Servings: (24 (1 tbsp or 15 g each)


INGREDIENTS

  • 225 g (1 cup) my sugar free sweetened condensed milk 
  • White chocolate from scratch
  • 170 g (6 oz) organic cacao butter  
  • 70 g (1/3 cup) monk fruit sweetener  – ground to confectionery powder
  • 30 g (5 tbsp) heavy cream powder or coconut milk powder - for dairy free
  • 8 g (2 tsp)  pure vanilla extract  
  • 1 to 1.5 g (½ tsp) sunflower lecithin 

DIRECTIONS

  • 1.   Prepare the sweetened condensed milk (NOTE – the full batch makes 2 cups)

  • 2.   To a small pot, add about 1 inch or 2.5 cm of water, and heat the water until it is simmering. Place a bowl over the simmering water, making sure the water is not touching the bottom of the bowl

  • Making white chocolate (steps 3 and 4 only)
  • 3.   Place the cocoa solids into the bowl. Heat until almost all the cocoa has melted. Add the sweetener, cream powder, and sunflower lecithin. Stir to combine and cook over medium low heat until the cocoa butter and sweetener do not feel gritty

  • 4.   Turn off the heat and add the vanilla, stir to combine. Stir from time to time as the cocoa cools slightly

  • 5.   Pour the cocoa mixture into the pan with the sugar free sweetened condensed milk. Heat over low heat for about 5 minutes as you stir continuously. Let fudge mixture cool to room temperature in the pan. Stir as the fudge is cooling. Pour 2 tbsp of the fudge mixture into your mold. Refrigerate for at least 2 hours or until the fudge is solid

  • 6.   Use a food grade black food coloring marker to draw Jack Skellington’s faces, using different expressions. Or put 1 tbsp of sweetened condensed milk into a dish and use Wilton black gel to create a black to use, with a very fine craft paint brush, to draw on the faces

  • 7.   Store in an airtight container between servings. Enjoy!
