Costco Budget Dinner

INGREDIENTS

  • 500 g (18 oz) (Costco) lean ground beef – room temperature
  • 800 g (28 oz) (Costco) Kirkland Stir Fry Special Blend – thawed
  • Ground Beef Seasoning
  • 56 g (1/4 cup) olive oil
  • 34 g (1/3 cup) fresh ginger – grated
  • 15 g (2 tbsp) tbsp garlic – grated
  • 40 g (2 tbsp) sugar free tamari or coconut aminos
  • ½ g (¼ tsp) cayenne pepper (and ½ tsp for a hot spicy version)
  • Veggie Seasoning
  • 3 g (1 tsp) garlic powder
  • 2 g (1 tsp) ginger powder
  • 12 g (1 tbsp) sugar free tamari or coconut aminos

DIRECTIONS

  • 1.   Prepare and weigh all the ingredients before starting the stir fry.

  • 2.   Place the wok over medium heat and pour in the oil. When the oil is simmering, add the ginger, cook for 1 minute. Drop in the garlic, cayenne pepper and then the tamari. Stir as you cook for about 2 minutes

  • 3.   Add the ground beef to the wok and let fry until the bottom is well done, about 5 minutes. Flip the meat and fry for 5 minutes, tossing and breaking up large meat pieces as you cook the beef thoroughly. Use a slotted spoon to scoop out the meat and transfer to a platter, leaving the oil and drippings in the wok

  • 4.   To the wok, drop in the thawed vegetables, cook for 5 minutes, season with the sprinkle of garlic powder, ginger powder, sweetener and the tamari. Toss well as you cook for 2 more minutes or until the vegetables are cooked to the al dente stage. Do NOT overcook the vegetable as they will be too soft and mushy rather than having a nice firm texture

  • 5.   Return the prepared ground beef back into the wok and immediately toss with the vegetables. Toss as you cook for 2 minutes. Remove from heat and serve while hot. Enjoy!
