1. Preheat the oven to 300 F or 150 C. Line a baking sheet with parchment paper and set aside
2. To a mixing bowl add the egg white, whisking to a foamy stage. To the bowl also add the celery salt, garlic powder, smoked paprika and liquid smoke. Whisk until all the dry ingredients are well combined with the egg white. Drop in all the almonds. Toss until all the almonds are well coated. Evenly spread all the seasoned almonds on the prepared baking sheet
3. Place into the middle position of the preheated oven and bake for 30 minutes in total, BUT do toss at least once at the 15 minute point to roast the almonds evenly. Remove from oven, sprinkle half of the fine salt over the almonds, toss and sprinkle with the rest of the salt. Toss again. Taste for salt and adjust to your liking. Let cool completely. Store in an airtight container
