1. Cut the wing into three sections, tips, flats and drums. Remove the tips, store in freezer bags and place into the freezer for later use in soup
2. Pre-heat oven to 200 C or 400 F. Line a baking sheet with aluminum or parchment to catch the drips and for easier clean up. Set aside
3. Pat dry the flats and drums and place into a large mixing bowl
4. In a small bowl or glass combine the baking powder, mix and salt. Stir very well to combine
5. Sprinkle about 1/3 of the baking powder mix over the wings. Toss to coat, then repeat 2 more times until the wings are all well coated
6. Place the wings on the oven rack, leaving a bit of space between the pieces. Place the wire rack over the lined baking sheet and place both in the middle position of the oven
8. Remove wire rack from oven and flip all the wings. Return the rack to the oven. Set the timer for 20 minutes
9. In the meantime, prepare the Buffalo BBQ sauce. Place a small pot onto your stovetop over medium heat. Add the oil and when the oil is warm, add the Frank’s Hot sauce. Cook and stir for 2 to 3 minutes. Remove from heat and set aside
10. When the wings are done, remove them from oven and place the wing parts into a deep mixing bowl
11. While the wings are still hot, pour the Buffalo BBQ sauce over the wings and toss well to ensure even coating of all pieces
12. Let the coated wings rest for at least 5 minutes for the BBQ sauce to infuse the chicken skin
14. In the meantime prepare the Lemon Pepper BBQ sauce. Place a small pot onto your stovetop over medium low heat. Add the butter and when it has melted, add the lemon juice, lemon zest and pepper. Cook and stir for 2 to 3 minutes. Remove from heat and set aside
15. When the wings are done, remove them from oven and place the wing pieces into a deep mixing bowl
16. While the wings are still hot, pour the Lemon Pepper BBQ sauce over the wings and toss well to ensure even coating of all pieces
17. Let the coated wings rest for at least 5 minutes for the BBQ sauce to infuse the chicken skin
19. In the meantime prepare the Italian Herb & Garlic BBQ sauce. Place a small pot onto your stovetop over medium low heat. Add the oil and grated garlic and cook just until garlic becomes light golden
20. Add all the dry spices; basil, oregano, thyme, black pepper. Cook and stir for 1 to 2 minutes.
21. Add the chopped cilantro and cook for about 30 seconds – just to wilt the cilantro and for the flavor to infuse into the sauce. Remove from heat and set aside
22. When the wings are done, remove them from oven and place the wing pieces into a deep mixing bowl
23. While the wings are still hot, pour the Italian Herb & Garlic BBQ sauce over the wings and toss well to ensure even coating of all pieces
24. Let the coated wings rest for at least 5 minutes for the BBQ sauce to infuse the chicken skin
