15 Minute Eggroll in a Bowl, Beef version

Spaghetti Pie – Keto Version

This easy Italian recipe was adapted to be gluten free, grain free, keto and low carb. This spaghetti (squash) pie is an excellent keto breakfast or lunch and because it is even better when cold, the spaghetti pie is perfect for kids’ school lunches or to take to work as an on the go breakfast or lunch. The main ingredients; spaghetti squash, eggs, bacon and mozzarella work perfectly together to create a filling, tasty recipe. Lemon Basil Baked Cod

An exceptionally easy fish recipe that incorporates fresh ingredients such as lemons, fresh basil, parmesan cheese and creamy butter. This whole food based, simple recipe is perfectly paired with my French green beans with almond butter – a shortcut version of French green beans almondine. The complete meal is perfect for low carb, keto, paleo diets and also for people on a diabetes diet, PECOS and gluten free diets. If you prefer, you could substitute the cod fillets with mahi mahi, catfish, whiting, tilapia or any white fish of your choice.

Dairy Free Mint Ice Cream (No Machine)

This ice cream is creamy, NO machine, sugar free, dairy free and egg free. In other words, this is a vegan keto ice cream. This tasty mint ice cream has a fresh taste, and with no coconut aftertaste. The keto no machine ice cream is easy to make. The recipe uses coconut milk, Lakanto monk fruit sweetener, and fresh mint leaves to create a refreshing aromatic mint ice cream flavour, which you can enjoy even if you are not vegan, or if you are not on a low carb or keto diet.
